python3Packages.hypothesis: drop docs

They were in passthru to save on dependencies, but that means they don't
get built anymore, so in hindsight they haven't been maintained for a
long time now.

The way forward is to Use https://hypothesis.readthedocs.io/en/latest/
instead.
