nixos/immich: fix matplotlib warning in machine-learning

machine-learning[1920443]: mkdir -p failed for path /var/empty/.config/matplotlib: [Errno 1] Operation not permitted: '/var/empty/.config' machine-learning[1920443]: Matplotlib created a temporary cache directory at /tmp/matplotlib-uo52wf71 because there was an issue with the default path (/var/empty/.config/matplotlib); it is highly recommended to set the MPLCONFIGDIR environment variable to a writable directory, in particular to speed up the import of Matplotlib and to better support multiprocessing.
