Felix Singer d674d9f0c1 nixos/redmine: Add option for pandoc support allowing document preview 
The pandoc support allows previewing LibreOffice and Microsoft Office
documents using a Markdown rendered text. Add an enable switch for it,
so it can be easily used.

John Titor 5fbdffc223 nixos/ollama: replace gnu parallel with xargs for paralellism 
Switch the model pulling mechanism from pkgs.parallel to standard xargs paired with nproc. This removes GNU Parallel (Perl runtime dependency) from system closure.

Dynamically limit parallel execution threads to the system core count using nproc.

Gautham Venkataraman 1b3a9c7c2a nixos/jellyfin: fix hevc10bit decoding toggle being silently ignored 
The hevc10bit option was written as a string entry inside
<HardwareDecodingCodecs>, which Jellyfin ignores - that element only
accepts ffmpeg codec names (h264, hevc, vp9, ...). The actual gate
for 10-bit HEVC hardware decoding is the boolean
EnableDecodingColorDepth10Hevc element, which the module never
emitted.

Mirror the existing hevcRExt10bit / hevcRExt12bit handling: exclude
hevc10bit from the codec string list and emit the dedicated XML
element.
